A big bunch of carrots from Roy Ranch

Oh, how we love receiving fresh Friday home deliveries of baby carrots, summer squash and blushing beets. Our friend, Kristen Roy, drops off a weekly supply of organic produce and farm fresh eggs. She just started her CSA (Community Sponsored Agriculture) project this spring, but it’s in full swing. We have more vegetables and herbs than we know what to do with.

Every Friday afternoon, Kristen pulls up to the house with an eco-friendly “I love Dirt” canvas bag abounding with yummy treats (including the occasional homemade jelly or cache of coveted strawberries). The various varieties of lettuce are always the first to go, and the mint makes for some pretty mean mojitos. This week, my personal faves are the pickling cucumbers and the two little beets that I plan to roast, cube and sprinkle on salads with goat cheese. DE-lish and DE-lightfully green!
